Decorating with royal icing for the first time

One of my most awaited session in our baking class happened a couple of weeks ago when I made a carrot cake and decorated it using royal icing. Everyone gets excited when we make a recipe that calls for decorating with pipping bag and tips!

Unfortunately, my royal icing was not stiff enough to hold its shape. My excitement got the best of me when I transferred the icing to a pipping bag and started decorating. I should have added more sugar to the mixture until it was a better pipping consistency.

Recipe: Chocolate Crinkles

Chocolate crinkles, or chocolate crackles as some refer them to, is the first sweet treat I made when I got a counter top oven. I wanted to bake something simple first and of course it had to have chocolate! And making them only requires a few tools and ingredients that I can easily source from a nearby baking supply store.

The chocolate crinkle recipe below is based on Donna Hay’s Red Velvet Chocolate Crackle recipe that appeared in her December 2014 magazine. The first time I made these cookies, it turned somewhat purple or red violet.

Recipe: Basic Chocolate Chip Cookies

I like to call this chocolate chip cookie recipe a basic one because it is easy to make. You don’t even need a mixer for this, if you have a wooden spoon and a mixing bowl, then you are good to go. I have adapted it for other cookie recipes, too.

Don’t be afraid to adjust the amount of chocolate morsels to your liking. I made this with 1 cup brown sugar instead of the half cup brown and half cup white sugar stated below and it still turned out great!
